Deliciously Cheesy Gluten-Free Soup Rolls

Ingredients:
1/4 cup Greek yogurt
1/2 cup butter, melted and cooled
1/3 cup milk or coconut milk
2 large eggs
1.5 cups rice flour
1.5 tablespoons psyllium husk powder
1.5 teaspoons arrowroot
2 teaspoons baking powder
3/4 teaspoon sea salt
1 cup shredded cheddar cheese
Brushed Topping (optional):
1 egg yolk
1 tbsp coconut milk or regular milk
½ cup cheddar -Whisk egg yolk and milk together and brush on top of rolls. Place cheddar on top.
Directions:
Preheat your oven to 350°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the Greek yogurt, melted butter, milk, and eggs until well combined.
In a separate bowl, combine the white rice flour, psyllium husk powder, arrowroot, baking powder, and sea salt.
Gradually add the dry ingredients to the wet ingredients, stirring until a thick semi sticky dough forms.
Fold in the shredded cheddar cheese until evenly distributed throughout the dough.
Wet your fingers to help the dough not to stick, and portion the dough into 6-8 equal-sized rolls and place them onto the prepared baking sheet.
Brush on your egg yolk milk mixture and apply extra cheddar (optional)
Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown on top.
Remove from the oven and allow the rolls to cool slightly before serving.

Dear Lea, these rolls are truly delicious and very easy to make. I didn't have rice flour, so I just substituted rice flour and arrowroot for spelt flour and they were fantastic!
