Gluten Free Banana Oat "Cookies"

These power packed grab and go banana oat "cookies" are gluten free, processed sugar free, and absolutely delicious. They make a great afternoon snack or breakfast on the go for an added boost of protein, healthy carbohydrates, and superfoods.

Ingredients: Makes approx. 12 cookies

  • 3 Ripe Bananas

  • 3 Tablespoons creamy nut butter of your choosing (you could also use sunflower butter)

  • 1 Teaspoon Vanilla Extract

  • 1 Tablespoon Raw Honey (optional to sweeten If the bananas aren't sweet enough for your taste)

  • 1 Tablespoon Cinnamon

  • 1/4 teaspoon nutmeg (Optional)

  • Optional Add Ons:

  • Dried Cranberries or Raisins (Amount as desired)

  • Unsweetened Coconut Flakes

  • Superfood Cacao Nibs (Amount as desired)

  • Dark Chocolate Chips

Recipe:

  • Pre-heat your oven to 350 degrees, line your baking sheet with parchment paper, and place aside.

  • Peel your ripe bananas and break into chunks before tossing in your mixing bowl.

  • Smash up your bananas with a fork or masher until smooth.

  • Add your oats, vanilla extract, and peanut butter (or other butter of choice) and mix until the oats are evenly coated with the banana and peanut butter.

  • Add in your honey (optional) and mix thoroughly until evenly distributed.

  • Add your spices and add ins until evenly distributed throughout.

  • Scoop out your cookies into the shape and size that you desire and place on your parchment paper lined baking sheet (these cookies will generally be the same shape and size when baked as when you place them on the baking sheet pre-baking)

  • Bake at 350 degrees for approximately 12 minutes.

  • Allow 10-15 minutes to cool before enjoying.

  • Store in the fridge up to a week (bet they wont last that long)
